Hi, my name is Kristopher. Nurish Box is a passion project that bridges my love of discovering and trying new foods with my desire to share the benefits of a whole food, plant-based lifestyle.

I have loved food for as long as I can remember. I grew up in a small town where the culinary landscape was pretty sparse. I was fed a pretty standard American diet without a lot of variety. So I got excited anytime I had the chance to try something different. And even though my cooking skills weren’t great as a kid, I would try (rarely successfully) to concoct new dishes with the limited ingredients my mother had on hand.

At about the age of 20, I became vegan for ethical reasons, and I moved to Salt Lake City (the “big city” compared to where I grew up) where I started working in a vegetarian cafe. These changes opened my eyes to all of the new food possibilities. I became obsessed with finding and trying all the different cultural cuisines I had never experienced before. I would go to ethnic markets to search for interesting ingredients. Every time I traveled, the trip became all about discovering new and interesting vegan food (rather than sightseeing). Whenever a new vegan food product would hit the market, I had to try it. I was discovering a lot of delicious food, but it wasn’t particularly healthy.

In my early 30s (about 10 years ago), I attended a nutrition talk. What had drawn me there was the advertised catered vegan food, in particular the vegan deviled “eggs” (a favorite from my non-vegan days) — something I had never imagined would exist.  But little did I know that the talk would be much more life changing!

Dr. Michael Greger was the speaker and he focused on the scientific evidence behind the benefits of eating a whole food, plant-based diet. I had no idea that this science existed. I was intrigued, so I started to research and learn as much as I could.

The transition was slow, but I started shifting from all the processed foods I had been eating to including more vegetables, greens, fruits, beans, and whole grains — a vibrant world of whole plant foods I had never explored before.

In the last few years I’ve been focused on removing the salt, oil, and added sugars from the food I cook. While oil and sugar weren’t too difficult, eliminating salt was a challenge. But in the process I realized the importance of using fresh, high-quality ingredients to creating flavorful whole food, plant-based meals.

Even though the ingredients have become simpler, I still get excited every time I discover something I’ve never tried before. And with increased interest in the benefits of eating more whole food, plant based, I created Nurish Box to share the excitement of discovering these delicious and unique items with you as well as share what I've learned to help make following a whole food, plant-based lifestyle a little easier, and a lot more fun!
